What does N0, N1, N2 stand for?

I'm looking to replace the original Contis. Car is at 10,300 miles. While I have fastidiously kept the rear at 41 - 42 psi, the rears are showing classic signs of overpressure (makes me wonder if my gauge is right) with the middle of the tire almost all smooth.
Question is what does this N1, N0, N2 stuff mean? Since the tires on the car right now are at N1, does that mean that I have to stick with N1 or greater? What if the tire on the market doesn't even have this rating? Finally, are there independent shops around Chicagoland that you trust to put the tires on and do a complete alignment? The dealer wants $225 for the full alignment and $120 to mount the new tires.

Anyone recommend any independent shops around Chicagoland that you trust to put the tires on and do a complete alignment? Its about $350 to do this at the dealer.

In the Los Angeles area, if you don't mind going a little out of the way in a dingy area, I have been buying from Victoria Tire (owner Kiko) in Huntington Park for many years. The downtown Mercedes dealer sent me there some years ago to save some $$ (they sublet their tire work to Victoria, at least at the time). They beat Tire Rack prices, especially considering the whole package of mounting, etc., no shipping hassles, and are quite knowledgeable and honest.
