Here's a video of my muffler bypass. Two weeks ago a guy in a Ferrari F40 pulled up next to me and asked what exhaust I had on my car. It may be the exotic sound you want, but it's definitely not for everyone. The weight savings is a huge plus too.

I have muffler bypass on stock cats but I don't daily drive the car, or street drive it much at all. I can't imagine it would be tolerable with 200 cell cats but it's awesome with stock cats. Low-range torque is lost, but high RPM hp is gained and a LOT of weight is saved.

Yes stock cats are still on the car.
IMO it's not that loud after driving it pretty much daily for 3 years like this. I did a back to back with the stock mufflers and I can never go back. Hearing the car rev makes it so much easier to drive. Just have to watch out for cops in Los Angeles. There is a way to drive it quiet enough to where they won't notice it.
