Install was straight forward. Hub centric spacers are the way to go: can't imagine trying to center the spacer while tightening the nuts.
H+R spacers were very well made.
Here is the before-and-after picture. Not too obvious, but fills out the well just right.

If it does I just might have to get used to other wheel looks and get some 11" wheels instead.
But I really like the 993 Turbo Twist look the best and none is made in 10.5 or 11".
By the way, if I were to get 11" wheels now, wouldn't the rub be even more likely than adding 21mm to 10" wheels? Does that mean the suspension sits too low and must be raised a touch for 11" wheels (the ROW height is where it sits right now)?
If it does I just might have to get used to other wheel looks and get some 11" wheels instead.

I have 11" bbs lms in the back with stock tire sizes. 11x18 et 56 with 23mm spacers... if you calculate things out, this is effective offset et 33, which would make the wheels 20mm further out compared to stock 10" et 40 (cf. your 21mm)... so, your set up may work, depending on tire brand etc (you are only 1mm further out than me). My wheel wells are pretty filled out and I do get a slight rub on the passenger side when the suspension is fully loaded, (depending on how stiff I have the compression on my shocks set).
With regards to your question about 11" wheels, it all depends on the the offset you speck out. From my experience, et 33 with 11" is the most you can probably go. Also depends on how large a tire you are using. You just have to draw some pictures and figure out what the offset measures and changes where the wheels sit....I have to do this every time I'm thinking about wheels/tires, it's kind of hard to explain in words. There are a number of threads and internet site explaining wheel offsets...
