My 993 Narrow body, fresh off the scales, back out driver weight and fuel and I am at 3,044. This includes the spare tire (not mine!) and tools. I have replaced the stock seats with EVO 2s and added a DAS-sport roll bar.
I too am on the South Beach Diet...6 months on that plan and I'll have shaved 45 Lbs off the driver weight. It could happen.

Are you on a South Beach diet (where you eat differently) or a South Beach diet (where you chase gorgeous chicks down Ocean drive)?
