When I need to replace my Cab Top, what colors are available and who manufacturers the Top specific to our cars?
I am thinking about a RED top on a white body? With Black Leather!!!

Colors are very subjective of course. Main top colors with white were black, blue and maybe marble. I used www.worlduph.com in the past and would use then again. No affiliation.
You can contact them or others listed in Pano and should get sample canvas swatches. If you go with red (which I think is called lobster) and if any interest about resale, you may want to check that first. Also may consider getting matching boot.

Bob:
According to the Porsche 911 Red Book 1965-99, the following colors where available for the cabriolet:
Chestnut Brown (often confused with burgandy)
Classic Gray
Marble Gray
Dark Blue
Black
My car is GP White with chestnut brown top and interior. I'd be happy to send you a photo if you would like to see what this looks like.
As for a replacement, of course there's OEM, but an Internet search will produce a few sources as well.
