Great car, congrats...love the color combo
"Probably add Fister exhaust first (should I go stage II or III?) then Bilsteins." II or III is personal preference, with III being the loudest. Were I in the market, I'd go for FD III.
The Bilstein PSS 10 (10 adjustments) is a great street suspension, total ride adjustability. I found the Tarrett Engineering drop links worked best for me. I track my car so reliable and rugged drop links are a must. The Bilstein HDs are also a great shock, but are not adjustable. I haven't personally run these.
Sway bars? Now that is a whole different story.....keeping in mind that Porsche had a pretty good idea on what provided the best all around ride. If I had a street only car, and didn't drive briskly over very curvy roads, I'd probably stay with the stock sways...all in retrospect.
On my narrow body 993, I found the 993 RS sways, 23mm from, 20mm rear with Tarrett drop links was a great street and track combination. I have had bigger sway bars on the car...took them off and went back to factory RS.

If your car was maintained by Cheech then you should be in good shape. He's one of the best for air cooled cars in the NYC area. Enjoy the new ride!
