typically, my take is that a color change is not a good idea.
HOWEVER,
since you are cutting the fenders and making it a hot rod it is not so bad to change color especially since it is in the same family of color. (the color you have picked out looks really good FWIW)
Now, with that being said, if you wanted to stay purist in a sense, the factory color with all GT2 mods would look clean and quite possibly pass for a real GT2 as opposed to a custom painted clone....
All depends how bad you really want this color as your dream car over stock color.
Some people would paint it a bubble gum color which calls for a paint change and understandable since those colors do not grow on trees.
Sweet build by the way. I want to do a GT2 build so bad!! Just all round classic bad *** 911 street car.

FWIW, when I was considering a PTS 997 turbo, I was looking at the grays and found subtle differences among slate, seal, and meteor gray. Slate has a definite hint of green to it. Seal and meteor are true grays, meteor being a bit deeper.
My PTS ended up being Riviera blue.
