people talk about mayo, zims, 9-11 enterprises, ruf and on and on ... but who is the best air cooled mechanic in dallas that you guys would trust to open up a block?

What year? All of those mentioned have a good reputation. I'd go to Bob MacAfee at Ruf for 964/993.
