Love the center exhaust, I was thinking of doing that or coming out through both sides of the license plate when I fabbed my exhaust but in the end, kept the original locations.
I'd do something like that, with or without perforations.
Here's a (crappy) pic of my rear bumper. Not like you want to do it but for some inspiration anyway...

Love the Finn's set up. With the center exhaust, cut across from the original exhaust arches.
Somthing like this.

If it looks too open then use plate nuts and a custom carbon fiber cover plate.

For mesh, you might search on the Pelican 911 forum and find what they were talking about using for grill (engine cover) mesh. Personally, I like the woven looking stuff.

I got mine from eBay (powder coated mesh) but if I had to redo it again, I would get the woven stuff Bart mentions above.
You can get stainless woven mesh in many different sizes from many places (just google) although I often look stuff from... What's the name..? Mastermacarrr? WTF? Can't remember it now.

I don't like that. To me it looks too "cheap" and is also only about 30-35% perforation.
I'd do mesh like photo below although if you cut the whole bottom out between exhaust cutouts, I wouldn't put a thing there, leave it open.
In fact this is what I was and still am considering.
Below are couple of photochops I did while back before I "butchered" my rear bumper and also a photo of a mesh I'd use.

I like the look of that second photo..... That may be the way to go, cut it all out and leave the exhaust on full display, It is a good looking exhaust so showing it off wouldn't be bad.

You don't see it in that photo, but what you see through the holes on my rear bumper looks cool, that's why I probably cut the whole bottom off at some point.
When I had my bumper off for this project, I was going to just leave it off for a while but in 993s, tail light require the bumper to be there (unlike in older 911s) so I had to put it back but man I it looked wicked.

Very nice setup..... What did you end up doing to finish the bumper?
I just cut section out between the stock holes (as you are talking about). I figured it was otherwise acting a parachute and needed to go.... It looks "ok" but not quite right, Ill post a pic if you are interested.

Hey Jeff,
Haven't done anything as yet on the bumper, been busy working on the race car.
Would love to see a pic of your final setup.... I go back and forth on different designs just cannot settle right now....
