Oil Warning Light.
With fast turns and hard breaking I get the red exclamation sign along with the oil warning light. I do have a slow oil leak which will be repaired as a Winter project (Timing chain gasket leak).
I check my oil level pretty often and will add some Mobil 1 15W50 as needed. Is this just a very sensitive sensor?

I doubt it. i'd humbly suggest it's time to be worried. You do not want the oil pump picking up air in the twisties with the egine screaming away. Are you sure there's enough oil in it? Otherwise the pump might be on its way out or you have too much play in the bearings. Either way I'd get to the bottom of it before going much further.

Well I warmed my 993 up yesterday and added 2 quarts of Mobil 1 15W50 (was low on oil as expected) and no more warning lights (after I did an intentional oversteer while making a turn and hit the breaks later down the street)!
I was not reading my oil guage correctly. I need to keep oil level at second twirl of measuring stick (not the first twirl as I was).

Well theoretically as long as there's enough oil to show on the dipstick and/or the oil level guage even pulses, there shoul be enough for the oil pump to be primed and ready to go. The dry sump system serves two purposes (at least), one to allow the engine to be mounted lower by having a low profile sump and two, to have a reliable oil supply in adverse conditions like high G corners which is why most serious race cars have them.
I'd expect the oil pressure light to go out pretty much immediately the engine fires and not to come on again, especially with the engine at revs. The light can come on in very high temps at idle but that would mean at minimum that I'd move to a heavier weight oil like a 50 or even a 60 if that were the case.
