My friend Freddy is very well impressed by Vincent Colosino (Gulf Performance Center) in Pompano Beach...I went there and his shop is excellente...tons of 993s and 964s being serviced there...(954) 783-7345
As far as "The Collection", I'd not take an air cooled Porsche there...they service Ferraris, Lambos, Audis, Jaguars, Lotus, Maseratis, Aston Martins... and Porsches...the water cooled ones...
But I know you took your car to Stokes already...and I heard good things about his shop as well...
