How to roll the fender without damaging the paint?

I'll post pictures later today.
Bob,
It is simple as you say but 993 is actually little more difficult since the fender lips are rounded, not "bent" as older 911s.

Go slowly, and don't try to do too much in one pass. Numerous "rolls" with gentle pressure is better than trying to do it on 1-2 passes. A heat gun, I've heard from others, helps prevent paint chipping ...can't comment on this myself but it would seem to make sense as you're trying to make the paint a bit more flexible to help it remain adhered to the metal as you fold the lip back.

OK, here are couple of pics. All of the pics are from driver's side rear fender (I only rolled the rears since fronts don't rub (245/35 tyres and 18x8", ET 48 wheels)
They show pretty well where I have started "rolling".
I could've gone all the way down in front section of the fender but didn't (1st and 2nd pic). You really only see what these photos show when you're right next to a car and most of them only when lying on the ground.
On the back side of the fender (3rd pic) I went all the way down where the bumper starts, I did this because my tyre was rubbing at about 1-3 o'clock position (Bill, are you listening?).
If you have further questions, please ask.
