I've been looking at upgrading to some 17 inch wheels, and was curious about offsets. My 16 inch wheels are 55 on the front and 70 on the rear. Should I look for these exact offsets or will slightly different ones interfere with the calipers?

ET55 for both front and rear is standard (Cup II 7" and 9" x 17" wheels).
It's not the calipers that would be an issue. The offset will affect it if the will rub on the inside or the outside of the fender well.
Caliper clearance is determined by the style/design of the wheel and not the offset. While normal/stock 16" one-piece wheels and some 17" one-piece wheels will not clear big red calipers, my 16" 3-piece wheels clear them just fine.
