CORRECTION: there are in-dash units that will clear the dash... Have a look at the Kenwood series of in-dahs DVD navigation units with the "Z-Action" flip out mechanism... the mechanism extends the flip out screen much further away from the unit, and you can set the angle position so it is at an optimal position. Imho, a much better option than cutting the dash or something else that is irreversible.

zoomzoom - im almost certain that the Kenwood "Z" flip screen still will not fit below the dash. I looked that this last spring and it didnt clear. Id love to be proven wrong, but i dont think it works

Why not get the portable type so you don't have to mess with your dash or stereo.
