@OP. I see your situation as an opportunity to mod to make it your own and 100% perfect.
Steering wheel: easy to find used OEM GT steering wheels for cheap. OR something like this:
Seats will prove more difficult as used 14 or 18 ways rarely come up for sale. IDK if LWBs are an option for you but they come up for sale all the time and while a heavy outlay you'll recoup almost all of it on the back end when you resell them. These are pretty badass also:

Drove my car home yesterday and will say that the 4 way seats and standard steering wheel are mistakes. Seats are not comfortable in the lumbar area and wheel is too skinny compared to my Macan S. Not huge issues, but I’ll do better next time!
Agreed on the steering wheel - I did find it too skinny as well. I have a OEM GT steering wheel if you're interested. Heated.
Do you have kids or use rear seats? I got 18way on my GTS but had 4-way on S. You eventually get used to 4-way. I had trouble though with moving it back and forth with the kids and trying to find the right fit. With that said 4-way were much easier to move back and forth to get access vs 18-way.

Please don't beat yourself up too badly. I ordered two 992's about a year and a half apart. Made just a few small mistakes on my first one, thought I totally had my Sh*t together on my second one yet still made a couple of mistakes on my options. No big deal, these cars are so fantastically fun to drive that they make up for these small mistakes and your steering wheel is a easy fix, the seats a bit more troublesome but I'm sure you can find a solution. You car looks fantastic too! Happy motoring.
I am disappointed with the optional leather GT wheel in my new Targa 4S, it is too thin! The optional GT wheel in my 991.1 was much thicker and silly me assumed the wheel would be the same in the 992, NOT!!!
That's unfortunate that OP has regrets with a brand new car.
This should be a testament for others as to why it's important to not make these choices in a vacuum. Get out to multiple and various dealerships to try as many of these things in person as possible. If too few dealers with too few cars, then get out to local Porsche events and network with other people. PCA has a trial membership. Most Porsche owners really don't mind mature adults sitting in their cars.

Seconded. I bought my first Porsche in January (a Cayenne base), fell in love with it, and only after living with it a while realized the FOMO of options I ‘should have gotten’… so ordered a “do over” Cayenne Turbo E Hybrid with a ludicrous amount of options (still missed one I won’t admit to on these forums). And while I was waiting for that build I watched so many reviews of the Cayenne being the “911 of SUVs”, that it only then occurred to me that many people own an extra “weekend car” and there was no law saying I couldn’t ALSO get a 911… so I ordered my first 911 from dealer incoming. Yes, 3 Porsches in 6 months. I’m 98% certain not having every option I would have spec’d on my 911 had it been my own allocation will eventually cause me to upgrade that one as well. Accepted danger of a car that is all about desire.
Honestly, it’s been not having a dealer within a 4 hour drive that’s meant “trial and error” on ordering Porsche options for me (not that the closest dealers seem to have any unsold 911 stock to even see or test drive these options), but I’ve loved the virtual journey. All these cars seem to be variations on amazing, and spending hours on the configurer and in these forums with you fine folks talking over these infinite customizations has made it SO much more fun than the very limited option packages most other brands offer.
Enjoy that beautiful car, accept that it and your next model will still give you FOMO, and try to see the relentless pursuit of perfection as part of the fun.
Thanks guys. Neither will affect my enjoyment of the car. The primary purpose of my post was as a heads up to others thinking about options. In my case, I wasn’t looking to buy a 992, but stumbled upon an allocation that was about to freeze. I had 2 days to make my decision on changing the spec from what the dealer had chosen for an inventory car. To be honest, I did consider the 14 ways and GT wheel, but decided against them at the last minute. Oh well, I love everything else about the car and will surely get used to the seats and wheel in time
