I just ordered a 992 GTS4 to replace my Taycan as a daily driver and am having a hell of a time deciding on interior , thought maybe you guys could help as I want something that looks good and has great resale
Personal choice in the end. 3 very different looks. You mention resale, so maybe think about how long you’re keeping it to guide you. Otherwise pick the one that you really like, as you will experience it daily.
We have the chalk / slate grey interior in one of our cars and really love it. Gives a brighter feel. Beige / black also looks great, really rich looking. GTS is classic GTS look, but I’ve never been a fan of the GTS interior look, why I chose a 4S for our 911’s, but again that’s our personal choice. Many love it.

How many miles do you drive a year? Racetex won’t age well if driven a lot. If not, it’s a nice safe choice.
Chalk is painful to keep clean and maintain (e.g., using blue jeans) so would avoid for dd. My personal preference would be option 3 or to go with truffle brown

Chalk always looks nice and if you only keep it for a few years will be fine, for longer I am always concerned how it looks when it shows wear. Black on black is a bit boring to me, so maybe the middle ground is beige.

Yeah i have Chalk in my Taycan, and my RS is coming with the black and Chalk interior to kind of leaning towards the Tan

This car is ridiculously sexy! Option one definitely (GTS Black with Chalk stitching). P.S. I know you asked the guys-- and I'm a woman---but I thought I'd throw my 2 cents in anyway ;-)

For resale value, you'll want to pick your options such that the combination is middle of the road. The more unique you make your car, the more unique a buyer must be found when it comes time to sell it. Private sale or trade-in, it's the same because a dealer knows what is and isn't a challenge to sell. FWIW, a White or Chalk interior is never a good idea, if resale is something you're concerned about. Black, Grey or with the right exterior color Brown.
Personally I would go with the GTS interior or the Black/ Beige on the black car. I worry about introducing the gray with the black as well. Though it looks nice in the post above with the Ruby Star Neo Paint.
I think the GTS interior would hold up well if you take care of it and brush it often to release oil and dirt before it gets nasty. Also you have a GTS, which really is unique in the interior use of Race Tek. To get that much RaceTek in another car would mean a GT model. You have it in the headliner, already so i would just extend it throughout. Also if a buyer is looking for a GTS in the future, I think having the GTS interior would be a plus.
A few other thoughts on your build if helpful.
Add the smokers pack for free and get a a free cubby (you still get the drink holder)
Add dashcam prewire if you EVER think you may want the Porsche Dashcam
Debate the painted side skits vs getting GT3 side skirts cheaper, and since you didnt go high gloss black on the other plastic pieces the GT3 side skirts would match without additional cost. Also non painted plastic can take more abuse. Disregard if you are wrapping in PPF
Confirm that the LED Matrix Lights actually work in Canada. Otherwise they wont have more functionalty than the lights that come standard on the GTS. They arent enabled in the USA, though you can pay around $800 to have them enabled by a third party

I picked up a white RS, so wanted something dark as the daily, it will be stealth wrapped soon as it arrives- going to go Tan interior as its the opposite of the RS interior
