Stripped out T with zero options except LWBs and PCCB would be my ideal spec. Probably not something most people would go for. I don't like a lot of extra junk on a T spec - dynamic cruise would be a waste for me.
I wouldn't let CPO stop you. Nothing wrong with a low miles CPO. My Touring is one and it's perfect.
One small thing to consider - the 2021 has the old PCM I believe. That one is slower and has an inferior Homelink integration. Not a dealbreaker, but the new one definitely works better with faster boot times.

I don't think this will do it.
Unless you're driving it something like 7/10 and above, you're not going to notice the difference. And for a car that's on a dealer lot, no way they're going let you drive a car anywhere near its limits, esp. on city streets (which is what you will be doing if it's only a 30 minutes drive).
Get the S. It's a better car, a better value (given it's "used" and CPO'd).

IMHO: A "T" with a MT is an upscale base 992. A "T" with a PDK is really just a budget "S". I have a 2021 C2S and thus my bias is firmly for the "S" given your two choices. There really isn't much mechanical damage that a new owner can inflict on a car (any car) in the first 10,000 miles that will have an impact on the long term mechanical durability of the car. Even ignoring something as basic as the break-in limitations, or driving through a bad chuck hole in a street, will not be issues that the CPO warranty period won't cover and/or having the dealer pull the Porsche Service History won't expose. Now, damage to the soft parts? That's different. The Paint, Interior, Wheels, etc are something else entirely. But between your visual inspection and a CarFax report, you should be OK.
