I think the 992 GTS has the most “motor” of the T, GTS and GT3, when it comes to all around power. If you don’t plan to track the car much, the GTS seems like the way if power if high on your priority. Here is a nice comparison between the T, GT3 Touring and GTS.
Oh man... I went through nearly this same exact exercise about 8 months ago.
Unfortunately someone totaled my manual 991.2 T and I needed a new car. I'm like you in that I wanted a car to be raw, but I also wanted something reasonable for daily driving and not just weekend/track duty. I have no interest in a cushy Targa or a sound-dampened S. Just a personal preference. The T was/is a great balance, and I probably would have bought another as a replacement if there was decent availability.... with a manual transmission, ceramics, and bucket seats. But alas.
I've also wanted a manual 991.2 GT3 forever, so I test drove a few. They are great cars but I could not stand the NA power delivery. It felt slow compared to a tuned 991.2 T, and I was missing all the low end torque. (I recognize a GT3 isn't a slow car, and I was definitely loitering too low in the power band, but it required a different style of driving that I was ultimately uncomfortable with and didn't think would work well for daily driving.)
Long story short, I ended up with a manual 992 GTS with lightweight pack and bucket seats. It fits the rawness quotient perfectly, and even more so after installing sports cats and an M Engineering tune for both power and exhaust valve purposes. It's crazy fast. Way, way faster than my T. It has better mechanical grip and it's more rigid. The interior is more refined (not necessarily better or worse). The steering feels more dialed-in. The 7MT is MUCH improved... I had clunky 2nd and 3rd gears in my 991.2, and the 992 transmission is like butter (especially with a Numeric short shifter). I still like the exterior styling of the 991.2 better than the 992, but that's a bit subjective.
Overall I think the 992 is a bit better at everything so this might seem like a strange comment but if I had to do it all over again knowing what I know now I'd probably wait for the right 991.2 T. It just had more character. The transmission issues weren't that noticeable day-to-day. The fabric door pulls were so cool. You could really feel the narrowbody-ness both inside the cabin and while driving. It felt less like a modern car and more like an upgraded analog driver. I thought the exhaust note was better on the 991.2 with sport cats and headers. And the extra power in the 992 isn't really usable to be honest, it's way too fast for everyday use. (And add to all that the 991 forum on Rennlist is way less toxic than the 992 forum.)
Personally I’m not crazy about Shark blue, i liked Sapphire Blue much better. It’s better than Miami Blue though. I really like GT silver but it may be too conservative especially for weekend only / special car.
The available colors are not great, that’s why everyone wants PTS.

Coming from someone who owned:
991.2 4S
992 Base C2
992 GTS
and now a 992 GT3
I can confidently say the following statements (my opinions) about the 992:
The Base sounds great with PSE, as will the Carerra T. No huge difference in the GTS until the higher RPM peak, then it has a higher decibel.
The power is enough for road driving, with very little to no turbo lag on all Carerra models, Base and GTS(I was expecting more lag with the GTS, as the 991.2 had bigger turbos and had that profile, but not the case with the 992)
The suspension felt different on the GTS, the car felt more planted, but not insanely different than the base, I imagine the Carrera T will feel more like the GTS.
The brakes and wheels on the GTS are far superior, but you won't notice much unless you really push the Carerra Base or T.
For the best driving experience, go with RWD only.
The GT3 feels like a completely different car with the front double wishbone setup, and the 7speek PDK. Night and day compared to the 3.0T with 8Speed standard PDF configuration.
The Base is still a better sports car than ANY Bmw/Mercedes/Audi sedan in terms of the driving experience and control.
