Anything but the black... I HIGHLY recommend doing the 1930s interior package.... Adds such a nice touch of class to the Targa, the ONE option I wish I checked....

Another coincidence - my friend in the village has an Agate 991.2 GTS but I would have sill gone Agate if they hadn't switched me to Aventurine. Lots of helpful advice on this thread but just go with your heart and get your favorite combination of exterior and interior colour - my wife hates the Heritage Interior in Cognac but I am still having it!!
Don't worry about keeping it clean, no dye transference with jeans, and the only marks I ever get on the interior are on the door panel if my shoe hits as I exit. I just wipe it off with a damp rag. I presume this will be a special car and you will not be driving with wet, dirty clothes or greasy dirty hands or hauling stuff.

Good on you. My best friend and me always swap cars. So both of us want to keep the variety.

I have a Cab GTS with the slate interior. Done some 5,000KM in the year I have had it with mostly top and window down driving. So far interior looks like new
I went with the Heritage interior on my GB Cabriolet. After see it in person at my local dealer, I felt it was worth the extra $$$. Showroom pics is another members. But it's your build, go with what puts the biggest smile on your face. Congrats on the Targa allocation, gorgeous ride.
