Colors, be it exterior or interior, are so subjective. What looks great to me may have you looking for an air sickness bag. We invest a great deal of money in these cars so ordering a color without actually having seen it just seems like too great a gamble. There certainly are safe old standbys that we know work but when pushing the color envelope try to see it in person. Tough to see any 992’s no less ones in various colors but a lot of colors translate to other Porsche models and cars in for service.

I test drove a 2017 991 with a red interior. Not sure if it was today's Bordeaux or an older brighter red leather, but I felt surrounded by too much red. Couldn't imagine being in it all the time. But I have seen a lot of Bordeaux Black interior pics on here that made me think on a Silver or Chalk or White car it could look really good. Again, without sitting in it, who knows. But like you said that is my subjective experience.
Perhaps an Exclusive Manufactur interior, black over slate? That gives you black in the key touch areas including center console. No seat inserts included, though. I'm not a fan of them.
Here is my gentian blue interior setup. Another forum member has the same interior based on what I did and both of us love how it turned out. It is brighter than this, less creamy. These pictures were in the garage and I think the exposure isn't great, as they turned out less "white" and more "cream" than they actually look.
