Now I know this particular guy at the dealership is taking me for a fool, because when I said 10hrs seem a little excessive, he said the door panels have to come off.
If he keeps this up, how do I set him straight? Should I talk to the service manager?

If a dealer quoted me 10hrs I would have raised hell like they have never seen. That's BS! It takes a few hours per side at the MOST! And thats for someone who has NEVER done it ever.
Id suggest you call your local Porsche auto body shop and see how much they would charge. They replace broken mirrors all day long and are typically cheaper for body part installs.
