I tried both, and the standard wheel had much rougher stitching.
Having tried them, notwithstanding the rim thickness (giddigy), I would definitely recommend the GT wheel just for feel and comfort.

I thought the standard one was much better - it was sportier and it let me see more of the screens behind.

Pretty sure the GT wheel is a smaller diameter (360 mm versus 375 mm or a little over half an inch). I personally prefer the smaller diameter wheel in my 991s but seeing less dash display in the 992 may negate that ...

It's a good job we can choose from both versions!
I did my PEC day at Silverstone and spent most time in a 2S with the standard wheel. I honestly found it very hard (as in not very padded) and the stitching was much rougher under the thumb when holding it for a prolonged period doing laps of the track.
The GT wheel was much better. For me, anyway - totally appreciate it is a personal choice.
