I found another "issue" with the 991 I am looking at. I prefer the paddle shifters that come with the sport design steering wheel. Is there a way to switch them? Cost? Any thoughts on shifting from those who have the "bat wings" vs paddle shifters?

You can switch from the MF wheel to the Sport Wheel, but not vice versa. If you have the heated wheel option, then you would lose that, I believe.
If you like the MF wheel buttons but just want the paddles, you can do the Techart conversion where paddles are added to the MF wheel.
Finally, if you want to add the stock Sport wheel, I have an excellent shape Sport wheel complete minus airbag for sale. Black leather. Came off my '14 Turbo S when I installed a custom Sport wheel.

I had a same issue. The mine I looked at and purchased had a basic PDK steering wheel (no MF) and just switched sport design steering wheel (airbag is interchangeable).
Dealer charged me 1 hour of labor (I supplied Sport Design steering wheel) for installation + reprogram.

in other news, i made the mistake of driving a turbo s today. i'm not sure i can live without one now :/
