Has anyone with a 911_50 used anything like 3M Scotchgard on the fabric inserts of the seats? If so, any colorfast issues to be aware of? And how did you apply it - tape off and cover the leather parts of the seats to avoid overspray?

Spot on. The pepita fabric appears to be a very high-end, durable commercial grade fabric. I wouldn't add anything to it. That said, I wouldn't risk it either by allowing food or drink in the car.

I disagree. I'm in the consumer upholstery business and in my opinion, the best product ever made for textile stain and dirt repellent is 3M Scotchguard, which you can still buy at the store.
The industry moved to all water-based products several years ago, and Scotchguard was taken off the commercial usage program as it proved to be carcinogenic when used in high volume, high exposure operations where workers were constantly exposed to it. The consumer product you buy at the store was allowed to remain as exposure rates are a small fraction vs industrial applications. None of the modern water-based repellents work as well or have the staying power of Scotchguard.

Pulled this 35 year old pascha interior out of a wrecked 1979 928 for use in my project car. It definitely helped that this car was stored indoors most of it's life out of the sun. The 50th fabric feels much more durable than this old pascha, so doubt the 50th's will need to be treated and should live a long, happy and beautiful life. Like genxr said, keep food & drink out of car (water is ok) and get your ride a nice w-screen sunshade.02 T
