I would get red interior to go with the Agate Gray.
PDK+Sports chrono+PSE+PDCC are so good (both performance and sound) on the track, I would get them again if I were to upgrade to the next-gen 911.

I can't say I noticed PDCC much, so would not have it again. The 18 ways are nice and adjustable, but I never change them. On the track I found myself bracing with the left foot just as I did in my Boxster with it's base 'Sports Plus' seats, so I guess the 18 ways don't buy you that much.
These I could totally live without:

ZAB - Ornamental Porsche Crest
Also the 20-inch SportTechno wheels may be slightly wider, but are not really worth the money.
I do use the sunroof, I would have liked the glass, but that's a lot of weight high up.
The PDK really is so good, I can't see ever driving a Porsche again with a manual, and this is after a Boxster Spyder that had an awesome manual gearbox.
I was concerned about the height with sport PASM and it has not been an issue at all, so I would certainly do this again.
The SportDesign steering wheel is a nice wheel. I don't like the look of the plain black wheel or the multi-function.
I sometimes regret not having full leather, the dash and doors occasionally do look a little 'rubbery' without it. However, the plastic A pillars bother me most. I wonder if you can get alcantara covered A pillars on the after market?
I also regret not getting the premium plus package, the ventilated seats would have been nice and also keyless start as all our other cars have this (including our minivan!!). The Porsche key is just a weird shape and not that pleasant or easy to use.
I don't understand people who order white gauges, this is a very expensive option (with the SC) and you still end up with a black digital gauge. Personally I like the silver rev gauge in the S as it turns white on black at night so it matches all the other gauges.

Burning Brakes
Rattles when open, but mostly, I just don't use it that much due to my climate. The window for al fresco driving in the hot, humid South is pretty narrow.
