Good thought thanks. Interestingly Tirerack recommends 20"

Good point, I should have mentioned that I was looking for recommendations on the 991S. Interesting Tirerack will sell you the tires but offer no rims.

I've heard that Hoosier Snow tires are the best for cornering traction in the Chicago area. Something about the special ice grip design of the tread. For an Additional $69.00 they come heat cycled with integral snow chains. That might be a Rocky Mountain only option if one need to drive Vail pass in a snow storm. I've heard that the chains are removeable should you desire to race in a spec class.

Talked to my service tech yesterday about using my current snow tires/wheels. They are 18", standard size for the 997. While he is pretty sure they will clear the brakes, his concern is the wheel offset of the 991 is a lot different from that of the 997.
As my car isn't due until April, we figure that we can try them and se how they fit and then make a decision to use them or get new ones.

Based on my winter experience with my 997.2 C4S - and we get SNOW here, the car needs much skinnier tires than Porsche suggests. Traction in snow is poor in spite of new Nokians. The car needs to be on 205s in front and maybe 235 max in back. Those don't fit on the wide wheels! It seems that the wheels/tires Porsche specifies for winter are meant for wet or dry pavement and cold temps but not real snow.

I tried snows on a couple Porsches in the mid/late '80s. And, altho I was from a state with significant snow and RWD, the P-cars did poorly at best with the set up.
Yes, only rear snows and it was 30+ years ago. But, I've aged and am less agressive these days. Plus, Porsches are lower to the ground now .... plowing with the air dam is not recommended.
I drive a 4WD truck in Winter. Plow mounted, too.

I don't know about the rest of you, but I would want my snow tires/rims to be able to accommodate chains as well, in the event full snow tires are not adequate for authorities...
I think you would have to find the right offset 19s and hope there is fender clearance.
Usually, Porsche Christophorus publishes the snow tire and cable chain compatibility charts in an article soon after a new body style arrives. Look for that.
