BTW, I'm not sure about Interstate, but Odyssey's AGM battery manual shows that 52 weeks of storage at 25 C would take a battery under 75% capacity, and this gets much worse for higher storage temperatures. Odyssey says their AGM batteries are fully charged at 12.84 V, with 75% charge corresponding to about 12.5 V.

You have to wonder what the cut-off voltage is on all these trickle battery chargers that just have LED lights for a display. I like the Harbor Freight ones that give you an shows you the voltage all the time, both when it's charging and when its idle.
The 100% charge of an AGM battery at 12.84V is open circuit, no load. Trickle chargers can vary from 13V to 13.5V depending on settings in the charger. Old school battery chargers run as high as 14.5 V. I have measured old Sears trickle chargers (the 2 amp types) that cycle from an on state of 12.9V to shut off at 13.5V. I use a marine charger from Pro Mariner that has both current and voltage readouts and can be programmed for flooded, AGM, maint free, and Li batteries. I always keep both my Macan GTS and 991.2 GTS on this charger when I am not driving them. To the Op's point and yours, I have found my batteries discharged the greatest after a return from dealer service. After picking up my 2019 GTS following purchase, the battery took two days to fully charge after sitting on the dealers lot. I also use Odyssey batteries but have never found them down on a charge after shipment from FCP.

This. Unless you know the true ampacity of the wire in the cable/pigtail (ie how it is de-rated), stick with what it came with. There'd be no reason to allow the safety device (fuse) to exceed the max current carrying ability unless you were really curious to see what would happen if that situation occurred. The fuse is there to prevent or limit damage, not allow it.
