Do I have this correct ?
Narrow body wheels (typically about 70mm offset in rear) will fit on widebody cars with spacers.
But Widebody wheels (typically around 50mm offset for rear) will not fit on a narrow body car.
Is that correct ?

All of the Classic "Fuchs" style wheels for the 991 for sale seem to be for widebody cars.
I love the look, but I have a C2S. I am guessing these wheels were not an option on a narrow body car ?

Correct, You can always make up for to high of an offset with a spacer, but you cant do the opposite.

You can defiantly do a FUCH style wheel, but itll be a custom order.

You may also need to account for width in the equation. GTS is Widebody like GT3 and has a 12 inch rear wheel GTS ET is 63. And of course you cannot run spacers with Centre Lock.
