Just got a quote from Porsche of Bellevue to remove the chrome emblems and rebadge with a black PORSCHE, $332 + the cost of the emblem ($92). Like I know Porsche is pricey but that seems next level. I honestly rather buy 3 more emblem sets and just pepper the back of the car with them

That's damn expensive. Do you have a local Porsche approved body shop? If so, call them to find out if they have the templates.
If they do, order black emblems from online Porsche dealer for lower price (again, I can sell you '911' and 'Carrera', haha) and remove chrome emblems yourself, you just need hair dryer and some goo gone (heat guns are running much hotter so you may damage your paint, hair dryer is safer).
And simply take them to a local body shop to install. I don't think they will charge you more than 1 hour of labor (it's really max 30 mins job including cleaning up the surface, lining up the template, installing the emblems, etc.)

I have an appointment at a local detail shop for tint, paint correction, and ceramic coating for next Thursday so I wanted to have it done before they do the ceramic, just so the rear bumper is as good as it can be. They said they can do the emblems too if I have the new one. They guessed an hour of labor (most of that being removing the old ones)( at $65 an hour but there is no chance that place will have the template.

Some of our members installed emblems without templates but it'll be much harder. If you search, you will be able to locate 1 or 2 threads regarding the rear badge install.
It's very tricky to make them straight on curved bumper with correct distancing between letters. I really wish someone makes paper templates but I was unable to find anyone makes them.

This is what I would have done if buying my car new. Looks very clean.
I pulled everything off and went with simple GTS in matte. I did not have a template and it is a pain to get straight. I'm sure mine is still crooked but close enough.
