Thoughts on 991.1 Cabs
I actually sold my F82 M4 to get into a 991.1 Cab. In my opinion, BMW has lost a lot of the luster that made their ///M cars feel special in years prior. I remember seeing the e92 M3 for the first time and thinking "wow now THAT is an M3." The F82 has better tech and more options as standard. Other than that, the 911.1 is a superior car. It may not be faster than an M4 but the experience of driving one is superior in my opinion. The 991.1 just feels special. The M3/M4 shares a lot with a mediocre 3/4 series platform. I really enjoyed my M4 but purchasing the 991.1 was a great move.
I’ve got a Mahogany Brown Metallic 991.1 cabriolet, and I love it. It’s a very unique color, and it’s a color that changes dramatically as light conditions change. Pictures don’t do it justice. While I love it, I agree that it isn’t for everyone. It may make resale a little bit harder when that time comes. That said, are you buying a car for yourself, or for the next guy? If you like it, then go for it.
+1 on getting full leather interior. Even at the used price point, the standard interior looks cheap.
Also, check maintenance history. Though they are low mileage examples, oil changes, spark plugs, brake fluid, ect should have all been done a few times by now based on age alone.

As a former F80M3 owner and big fan of them, and having driven a number of F83s, I'd say it's not close. The low end torque of the S55 is superior and the rear seat is bigger but that's pretty much it. I love F80M3s, especially on the track, but the F83 is not as much fun with the weight of the roof; my 991.1 is more fun to drive than any modern BMW IMHO. I was looking M4 as well but decided to go 991 and I don't regret it for a second. I still have my track prepped E36M3 but the 911 is just a joy.
But I've been casually shopping for a 991 Carrera for a couple years and this car will likely sell pretty quickly as a CPO, in this desirable color combo, at this price. Even back in March and April, 991.1's at my lola dealer in the $60k's sold pretty quick. If you like it, dooooo it.

This is a BASE + MANUAL vs M4 with DCT. the base 991.1 with manual and no launch control was .3 seconds slower to 60 than the M4 with launch control. A PDK would have closed that gap. A PDK S would have been a clear winner.

991.1 Base is faster around a track than an M4. 991.1S is also faster to 60.

People are just different; some prefer the low end punchiness of a boosted engine, some prefer having to wind out an engine to feel it build linearly. The thing about the M4 is it definitely delivers on the low end punch, and it comes in at a much lower price point. Driving dynamics are going to be in the Porsche's favor, especially as a convertible, but there's a compelling argument for the M4.
But the other thing I'll call out explicitly though is the engine noise. In southern California, I have to imagine the top down will be down A LOT. It's tough not to acknowledge that part of the experience. The M4 doesn't sound as terrible as some others try to suggest, but it really doesn't compare to a naturally aspirated Porsche flat 6.
Personally I think leather is incredibly overrated, but pretty obvious I'm in the minority here. FWIW my last 3 Porsches have had leather and honestly I think about it about as much as I think about what direction the toilet water flows after a flush.
Except the GTS package. Contrast stitching is nice. "Standard" leather is irrelevant as far as I'm concerned.
