thought I would post an update for anyone interested.
I never did end up installing the gas peddle I bought on eBay (I still have it if anyone is looking for one). What I did replace was the Cam Sharft sensors (both of them), Porsche calls them Hall Senders. The part number is 997 606 106 03
The job took all of 40 min from start to finish and now my car performs like new again. No more hesitation / stumble.

It would appear these hall senders should be considered a wear and tear item. My car ran great until I hit 87,000km (54059 miles).

My 991.1 4s was at the dealer (under warranty) for the past week to resolve the stumbling issue - they reprogrammed/reset the DME/ECU, performed a leak test (no issues), and now the stumbling issue seems to be resolved (for now....)

I am at 107k miles and have spare ones sitting in my spart parts bin. I may just proactively change them to see if the throttle response changes, but the car seems to be pretty happy in that department.

the dealer had my car for a week, tested it and did programming but it never solved anything (this was out of pocket for me). They did notice the stumble but could say for sure what would fix it.
