I personally can't stand red dials. Even in color scheme cases where it looks cool, I find them much harder to read with a periphery scan.
Personally I prefer black, but if you really want a high contrast that pops I'd go with white. I'd never get red.
However, if YOU really dig it, go for it, it's YOUR car!
