Yeah. I use a paper towel to wipe out most fat. Throw some water in there will still hot and then wipe with another towel. Keeps seasoning in check and developing. I only use this pan for steaks. Made mistake of using with a marinade with high sugar content and i had to reseason it.

the other trick is hold the fat cap on the pan for a couple minutes and then cook steak in that rendered fat. Helps to make that killer crust.

Joined the trend, got a Breville to play, and now Mooty has on the hunt for a Monolith grinder and machine to follow. Slippery slope.

Octopus plus fancy stuff...

Breville is great for the $$$ I have the Oracle at my office, it ticks a lot of boxes and is as automated as you’d want (for the environment it’s in) and manual enough at the same time...
