For convertible, buy a Mclaren. For open top fun, no Porsche will match the thrill of 600LT spider. Well, maybe CGT, but I figure you're not looking to spend north of half mil.
I should have added, in addition to being a cab guy, I am also a three pedal guy and an F1 is about 100x my budget.

Not sure , but I assume for a manual it can at least handle a cobb tune which imo is quick enough unless you are talking about tts quick in that case I'd suggest a 600lt spider as someone mentioned above

Just pulled a wild build with PTS/LWB/PCCB and it's about 120k

I also think there are no more 4 cylinder 718 allocations for US, but less importantly, the delta from the GTS and boxster spyder is not that big. It is $12,500 built the way I would between the two. According to the 718 forum, the stock 6MT trans is at max torque in a stock GTS or GT4 so not sure it’s a great idea to tune one.

No doubt the S/GTS 718 is quick, but I want fast.

I had the same thoughts and choose the new Spyder.
Will fulfll my “sport car for the streets “ needs for 1/3 price of a $peedster.

I know, it is not the same car...

991.2 GTS with a tune should do it, assuming you want to stay with Porsche. Otherwise, 2010-2013 Turbo's pop up with manual occasionally... but will be harder to find.

I don't think a Spyder would be a rocket, nor a Speedster (though much faster), as it sounded like you were after that feeling of low end torque that a Turbo will give you.

Back to your original list: The 997.1 Turbo Cabriolet made me feel dirty, because it was a lot of fun and I didn't love the 997.1 Turbo coupe (too soft in stock form) where I really liked the Cabriolet for reasons I could not put my finger on. It just gelled. YMMV, but this might be a fun fling...

under 100mph , dare I say a lightweight build 718gts will be just as fast as a... speedster. According to dyno result in stock it's 320ish wtq starting at 2k rpm on a car that will be ~300lb lighter. of course it fells short in the sound department and can't really compete with that 9k rpm awesomeness

Never wait for the next great thing. There will always be another great thing to follow it. Life is too short. You are gonna be dead for a very long time.
