Just keep in mind if you're driving in winter on summer tires and have an accident - you're automatically deemed at fault by your insurance. They might deny your claim and make it difficult claiming negligence etc. Be prepared for a battle.
I've never done it and always just go a Winter Set and use the Summer Set from April to Dec - both are developed for the car specifically given the wide/increasing spread of mandatory winter tire legislation.

After 4,000kms I traded the stock Dunlop Sport Max for Michelin PS4S.
Logged another 2500 kms before winter hibernation.
Very happy with these Michelins on my GT3T after a few break-in kms.

For just street use, I'd use the PS4s, too, for the warmer months. I put Pilot Alpins on in the winter.
Since I autocross, I've been sticking with the PSC2s, thinking that they'd be a better autocross tire than the PS4s. The vast majority of the autocrossers, at our Club events, use RE-71Rs (especially the Caymans). I've never seen them in GT3 sizes. So, what tires would people recommend for summer/autocross work? I'm happy to change tires for winter use. I'm not ready to change tires twice every other weekend for the warmer months.

took delivery and drove it home in 40 degree rainy weather and the Michelins performed great. Never got squirrely at all, but then again, I was driving pretty cautiously. The $465 charge to dismount and mount the tires kind of shocked me though.

Swapped my cup2 out for 4S on my .2GT3 a few months ago for an Alps tour. Tyres behaved great on the road in all conditions, normal, wet, cold (not freezing though), ...
