is 19” the way to go ?
I was previously running Trofeo’s on previous GT3’s as I drive to the track.

If you'll be driving to the track your choices of good tires for dual duty are more limited. As mentioned in many posts the best choices are the MPSC2, Trofeo, Dunlop Sport Maxx and RE71R's. There are numerous opinions on which are better but it really seems to come down to personal preference and furthermore availability. If you are coming to Tremblant for the PCA events regularly you could buy some dedicated 19 inch track wheels and go even more aggressive like Hoosiers and have them put them on/off at track. This way you could even change the OEM tires (after the first set wear out) to Pilot 4S - amazing street tire - and that way you would have a great set of street tires that are safe in the rain.
