I would add Sapphire blue to your list, check it out in person. I think it was still a standard color on the 18 GT3s before they replaced it with Miami.
As far as being worried about track use, as long as the previous owner wasn't an idiot I wouldn't worry about it, especially if you get a CPO (or even the remainder of the factory warranty).

My big question is how can you tell if the previous owner was an idiot if the car is being sold by a dealer?
What do people consider the threshold for being a basically new car? 3000mi? 5000 mi? 10000 mi?
How much would you depreciate for mileage for a GT3?

Lastly, stripes added to a car (especially the hood), by a previous owner are sometimes used to hide expensive to repair paint chip damage...
