Assuming your diagnosis is correct, almost invariably the clutch disc and the pressure plate are replaced as a pair.
The flywheel may be salvagable if the dual mass feature is working properly and if the tech believes the flywheel's friction surface not *that* bad or it can be resurrected with a resurface.
The reason the flywheel might need attention is that the overheating can cause hardspots to form and these have a different coefficient of friction and as a result the clutch's action become grabby/shuddery. So the flywheel may require resurfacing -- if the hardspots aren't too bad and the tech (experience helps him make the right choice) believes resurfacing will restore the flywheel's friction consisentency.
Or the tech may decide the flywheel requires replacement.
my front wheels where seized (I washed the car but did not use it for 3 days ), and I tried to force them by pushing forward and backward ( it worked before) .
they unlock for about 500 feet and blocked again but I did not realise it because the pavement was icy.
finally the clutch pedal stayed down and that was it with the bu rned scent.

Those were seized front wheels (brakes).
Too late for you but for others: After washing the car *drive* the car and use the brakes enough to get them hot enough to thoroughly dry them before putting the car away! When I pull away from the DIY car wash I apply the brakes and keep the throttle on a bit and let the brakes drag -- I can feel them biting -- for a few hundred feet.
You're lucky, after a fashion. I mean needing the clutch job is not lucky, not the good kind of luck, anyhow, but if the front brakes do not develop a pulsing symptom afterwards you'll be lucky.

Oh, before you throw away the sales receipt for that salvage clutch take it to your Porsche tech and ask if he'll confirm the dual mass feature is working properly. Generally this function is tested with the flywheel on the engine but maybe he has a way to test the flywheel on the bench.
