Agree with the auto stop - start but the AC settings (fan speed and temp) go with the key settings and you can have fan off at start up. I did this with my 2018 CS a couple of weeks ago. Same situation as you, didn't want AC coming up automatically in winter.
OP...By way of introduction, my daily driver a 2014 987-2 Cayman base equipped with the 19" wheel/tire package, PDK and PASM along with the other "premium" package options. Coming off of eleven years of a '97 993 Carrera as a daily driver, I found the Cayman to be quite the revelation.
I realize that a 987.2 isn't a 718, but since you asked for opinions, I have to say that I agree with Idamelio. The base 718 Cayman is a lot of car. I'd guess that not many Cayman owners ever test the limits of that car's capabilities, even when in a track environment.
Without knowing what car you're coming out of and how you intend to use your new Cayman, I'd suggest you consider the base car with an enhanced wheel/tire combination, then add the additional option package(s) that best fit your vision of how you're going to use your car. You've said you want PDK. I'd suggest you strongly consider PASM as well. It's marketed as a quasi-performance item, but it can be very helpful if you get a little "over-enthusiastic" on a mountain road someday.
In the end, it's a lease. So, if you find your Cayman not to be exactly what you want, you can "go deeper" the next time around.
Whatever you do, have fun with the optioning process and for goodness sake, drive your car!

I'm coming off of a Mercedes, so I'm quite excited to get started on the build! Would you choose PDK, PASM, over 14 way seating I guess thats kind of a dumb question ha. I was thinking about creating two builds one for performance the other for comfort, I'm not really worried about comfort I'd really love to experience the thrill of the car. I just feel like I will go over my budget in that category...
So, if it's me making the decisions, I'd add everything I could afford that'd make the car drive better. The rest (again, my opinion) is just fluff and silliness. Who cares if you have the optional whale hide upholstery with a vibrating ***** in the passenger seat? Nobody but you...
That said, set your car up for you. If you like whale hide, go for it. But for goodness sake, don't set it up for the guys on RL or for resale value and certainly not for the guy that might buy your car after you're done with it. Make it yours, then enjoy it.
I have the 14-way seat option, but to be honest, I don't get it....You've got your back, your ***, and your legs...Where do the 14-ways come in? I got in my car the first day I had it, set the seat and haven't moved it almost 16 months. To me (and it is just me) that 14-way stuff is just silliness. Radio? Mine's never been on. Honestly...Never. I don't even know how to turn it on. Another useless feature as far as I'm concerned.

haha nice! Yeah I promise its only for my enjoyment, I just wanted to get the RL pros opinion that already own the Cayman to see what is and what is not so important. Yeah I was thinking about the same thing when it came to the 14 or 18 sport way seats...How? Engine is behind you, plus I'm 6'2" I know I'm going to be sitting in a locked position. This will be my first Porsche lease and I'm trying to come up with the perfect balance of options for my budget. If one could add only a few essential add-ons to the Cayman, what would those be? There are so many options out there I'm a little lost as to what would make my driving experience that much better. Does one really need all the options, could I get away with a base 718 with options that make it a fun car regardless of S, or GTS? Thank you for any advice you all might be able to share. Side note; should I consider the 981 over the 718, just a thought...Cheers!

The question of 981 vs. a 718 is big one: a 981 would be used, your proposed 718 new. Likely you can find a nice 981 CPO example that will have an extended warranty. Personally, I like the naturally aspirated motor in the 981, but that just my own preference.
On 2017 718, saving the Key setting with AC off, doesn't work -- AC always turns on upon engine start from lock/unlock of 718.
