I think what you may be experiencing is the variocam changeover. It can be quite abrupt in these cars at part throttle. At least, that's been my experience in my 2.7 981 manual. Every time I come to a hill in high gear with the cruise on the engine will surge and the exhaust note changes as it comes under load to maintain speed.
