I always have either street or track tires stacked up in the garage. I have not had any problems and do not adjust the psi at all. I stack them with whatever they had when they came off the car.

Overinflation is normally used when the car is parked/stored for the winter, in an effort to reduce (but not eliminate) flatspotting.
On my son's kart tires, we wrap them in saran wrap and store them in the dark, away from UV (to help prevent tire hardening). No, no idea if it works, but it's what most people do!

Ozone (electric motors) is unkind to tires in storage as well.
I cheat, leave them inflated at the same pressure in the garage. They always come out and go right back on the car, pressure right out of the box (knocking wood)...
