Usually your tach needle jumping around is a sign that your alternator is on its way out. There is a electrical component in there that goes bad, a diode or resistor or something, do a search and you'll turn up some info

But would a dying alternator have started with the symptoms of my first post - car dying, an episode of smoke, etc... and gotten much much better with the parts I replaced?

OK - car is officially off the road again and think you may be right. With ignition to on (car off), voltage is a bit under 12. At idle, voltage is a bit under 13.
