Just found this thread, since I am rebuidng my motor too... did the OP find out the cause of the loud valve "tick"?

Hi Michael, all these years adjusting valves on all kinds of engines and it turned out that my "feel" for the flat 6 wasn't great. I spent more time on it during my last valve adjust and found all of them to be somewhat to very loose. It quieted down a lot after that, but still makes some sewing machine noise.

Good luck on your build. Be sure to triple your time and budget estimates

Kirk Engines Valve Lash Adjustment Tool for Air-Cooled 911s is worth EVERY penny! Subjective feel is completely removed from the equation.
