Always suede/alcantara, but I always wear gloves as the RS steering is heavy (no PAS) on tighter turns, and you need to always ensure good grip between the wheel and your hands.
I've had three LHD 964 RSs and the 07 Momo has been the first mod before ANY other mods on all of them.
As someone said, the stalks end up being further away than is natural from your fingertips, but you'll adjust quickly.
P.S. I had a head on accident in my BMW last year. The most shocking/unpleasant part of the incident was the airbag going off.
I was wearing my seat belt and thus I'm unsure what injuries I may have suffered if the airbag hadn't been deployed, but from previous experiences in lesser cars they're not the safety panacea the car manufacturers would have us believe.

I have also gone for a MoMo wheel, the Race at 340mm. You can get extensions for it to bring it closer to you. or hub eccentric spacers. (see the little bitty picture on the right)
