There are differences in aftermarket parts' quality which is usually reflected in the price. FVD sells genuine Porsche, Techart, Gemballa or other high-end parts. Regarding gauges, the less expensive options don't feature the same level of detail (colored indicator light cutouts) as the pieces from FVD.

Here's a Pelican diy which covers the procedure for an early 911. I've only removed/replaced the clock but I believe the big difference between our gauges is that the rear connections have been simplified. Otherwise, the steps are identical.

I've never swapped mine but to change the tach (or clock or speedo) you need to remove the indicator needle. When reassembling you would then resinstall the needle so it points the new resting position, as Nine11 suggested.
