Another question, if I wanted to go with the 965 rotors, can I fit 10mm spacers to the adapters if I were to use longer bolts? Or is that unsafe?

11mm is what is needed and yes it's been done. different pad retainers are used as well.

all in all it's best to use the calipers as the Porsche engineers intended. Which means 304x32 928S4 rotors for 993/928S4 calipers and 322x32mm 965 rotors for 964RS and 965 calipers.
