Default Oil temp needle sometimes below bottom mark, “wakes up”

This will sound like very small potatoes but my general approach is that if something starts behaving differently than normal it could be a sign of issues down the road. The small bore issue in question is that at seemingly random times for instance a balmy September morning oil temperature gauge will read below the bottom mark (first pic). A minute or two into the drive it will snap to its usual resting position which is at the bottom mark (second pic). Has anyone seen this behavior ?

I've been having the opposite of late - gets up to the first mark, sometimes a bit past, then hangs there even with the ignition off. I'll go back to it the next day, turn the ignition, and it'll sink back to where it should be. My oil pressure gauge has always been sticky as well.
