For what I saw, Esposito's work is very high quality and both he and his daughter are very nice. I have also recently seen the work of Perfect Lines Restorations and that looked impressive as well. Same neighborhood, north Hollywood. I asked about sunroof delete and the answer was the right one. They have what I think is a pretty-finished Rubystone in the floor. Very engaged guys, quite flexible, but I haven't tried them yet.

The fenn lane or other sunroof panel inserts can be done properly for a fraction of the cost. I would not glue but weld them in place. Mine came out perfectly and handles the stresses of track driving. My shop will do either and have equal results with both.
I don't see a full color change costing less than $30k to be done properly. The materials alone get quite expensive the time to gut and strip a car is enormous. GL
