Default Track oil/water temps?

Wanting to take a poll. If you have a water and oil temp gauge and track your car, can you list temps?

Air Temp:
Water Temp:
Oil Temp:
Oil Cooler:

I've installed a nascar oil cooler, and am hooking up my water/oil temp gauges, just wanting to know what to expect. At the end of a 20minut session, my engine bay sure feels really hot (way hotter than my m3)

Air Temps: 85-95*F... basic north east summer day between July - Sept
Water Temp: ~190*F taken at the upper radiator hose with a digital gauge / sensor
Oil Temp: ~230*F at the drain plug also using a digital gauge / sensor
Oil Cooler: Stock cooler

This is running without an a/c condenser and was with my old 120k mile radiator.. replaced with a new one recently but havent been to the track yet to see any difference.

Oil was Redline 15w50.

I have gauges in my NA. I was just at Lime Rock last week and it was 90+. Water was 180; oil was 190-200.

Max temps for two different sessions. Using a PWR custom radiator/oil cooler combo.

An average track day in Australia:
Outside Air Temp: 72F
Manifold Air Temp: 133F
Water Temp: 194F
Oil Temp: 213F

A hot race day in Dubai:
Outside Air Temp: 119F
Manifold Air Temp: 186F
Water Temp: 210F
Oil Temp: 269F

I've been told that you don't want your oil hotter than 260 - it starts to breakdown... And water, up to 212 is certainly fine... Probably up to 225 is safe.
