With that shop-manual it should be pretty simple. Count on about 2.5 hours to remove and 5.0 hours to re-install your first time around. The day before, soak all the exhaust crossover pipe nuts & bolts with penetrating oil and let sit overnight. That's really the only difficult part, removing those darn #$!@!@ exhaust bolts!

What does Garrity do to the heads? I had Technodyne do my head. They did a valve/seals/guide, port the intake and o-ring for $850.

The head I got from him had new valves, valve guides, springs, keepers and exhaust studs. A nice 3 angle grind and intake porting. $670.00 with core.
